Hugo and Angelica Chavez took a chance in 2022: they moved to El Paso, renovated a small trailer and opened La Bomba. The food truck grew into a Zaragoza storefront where the family continues serving the community.

In 2022, Hugo and Angelica Chavez left everything behind and moved to El Paso. They renovated a small trailer with their own hands and started selling birria. The community answered fast.
That food truck became a storefront on Zaragoza, where the same family still cooks the same birria that started it all.
Cooked Low and Slow
Our birria simmers for hours until the beef pulls apart and the consomé runs deep and red. Everything else on the menu is built around it.
